It’s the ultimate indulgence for any cheese and chicken lover. This Chicken Parmo recipe yields two servings and takes about 60 minutes to prepare and cook. It’s perfect for a cozy dinner at home.   • Chicken : 2 skinless chicken breasts
  • Flour : 60g plain flour
  • Eggs : 3 eggs, beaten
  • Breadcrumbs : 100g dried breadcrumbs
  • Oil : Spray oil
  • Optional : Salad, to serve 

For the béchamel sauce:

  • Butter : 30g 
  • Plain flour :30g 
  • Milk : 300ml 
  • Nutmeg : Grated 
  • red Leicester cheese: 150g

Heat your oven to 200°C (180°C fan/gas 6). Place the chicken breasts between two sheets of baking parchment and gently flatten them with a rolling pin until they are about 1 cm thick.

Set up three shallow bowls. In the first bowl, place the plain flour. Second, beat the eggs. In the third, spread out the dried breadcrumbs. Take each chicken breast and coat them first in flour then in beaten egg, and finally in breadcrumbs, ensuring they are well coated.
